- 3–4 boneless, skinless chicken breasts (1 lb)
- 2 cups fresh bell peppers (1 red, 1 yellow), chopped
- 1 medium onion, sliced
- 3 garlic cloves, minced
- 2 tbsp extra virgin olive oil
- ¼ cup low-sodium soy sauce
- 2 tbsp honey
- 1 tbsp cornstarch mixed with 2 tbsp water
Instructions
- Prep all ingredients by chopping bell peppers and onion into bite-sized pieces and mincing the garlic.
- Marinate the chicken in a bowl with soy sauce, honey, and minced garlic for about 15 minutes.
- In a large skillet over medium heat, heat olive oil. Sauté onions and bell peppers for about 5 minutes until softened.
- Push vegetables to one side of the pan and add marinated chicken. Cook until golden brown on both sides (6-7 minutes each).
- Stir in the cornstarch slurry and remaining marinade; cook until sauce thickens.
