  • 4 medium Hatch chilis, chopped
  • 1 lb lean ground beef or turkey
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • 6 flour or corn tortillas
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 tsp cumin
  • 1 tsp paprika

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash and chop the hatch chilis, removing seeds for less heat.
  3. In a skillet over medium heat, sauté diced onions and minced garlic until translucent (3-5 minutes).
  4. Add the ground meat along with cumin and paprika; cook until browned (7-10 minutes).
  5. Stir in chopped hatch chilis; cook for another 5 minutes until softened.
  6. Layer tortillas in a baking dish with meat mixture and shredded cheese. Repeat layers as desired.
