Instructions

  1. Rinse quinoa under cold water to remove bitterness. Combine with 2 cups of water in a medium pot and bring to a boil.
  2. Reduce heat to low, cover, and simmer for about 15 minutes until water is absorbed and quinoa is fluffy.
  3. While quinoa cooks, chop cucumber, cherry tomatoes, bell pepper, and red onion.
  4. In a large bowl, combine cooked quinoa and chopped veggies. Add crumbled feta cheese.
