  • 1 medium spaghetti squash (about 3 lbs)
  • 2 tablespoons extra virgin olive oil
  • 3 cloves fresh garlic, minced
  • ¼ cup fresh basil or parsley, chopped
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle olive oil over the cut sides, sprinkle with salt and pepper, then place cut-side down on a parchment-lined baking sheet.
  4. Roast for 30-40 minutes until the flesh is fork-tender.
  5. While roasting, heat olive oil in a pan over medium heat and sauté minced garlic for about 1 minute.
  6. Add fresh herbs to the pan just before removing from heat.
  7. Once cooked, flip the squash halves upright and use a fork to fluff the strands. Mix in sautéed garlic and herbs before serving.
