  • 1 yellow bell pepper, cut into chunks
  • 1 medium red onion, cut into chunks
  • 1 medium zucchini, sliced into thick rounds
  • 2 tbsp olive oil
  • 2 tsp garlic powder
  • 2 tsp Italian seasoning
  • Juice of 1 lemon (about 2 tbsp)

Instructions

  1. Wash and chop the bell peppers, onion, and zucchini into bite-sized pieces.
  2. In a bowl, mix olive oil, garlic powder, Italian seasoning, and lemon juice. Add chicken cubes and marinate for at least 10 minutes.
  3. Thread the marinated chicken and vegetables alternately onto skewers.
  4. Preheat the grill to medium-high heat (400Β°F). If using wooden skewers, soak them in water.
  5. Grill skewers for about 10-12 minutes, turning halfway through until the chicken reaches an internal temperature of 165Β°F.
  6. Serve hot with any remaining marinade drizzled over the top.
