- 3 tablespoons extra virgin olive oil
- Juice of 1 lemon
- 3 garlic cloves, minced
- 1 tablespoon fresh thyme (or rosemary)
- 2 tablespoons low-sodium soy sauce
- Salt and pepper to taste
Instructions
- In a bowl, whisk together olive oil, lemon juice, minced garlic, herbs, soy sauce, salt, and pepper. Add chicken breasts and coat well. Marinate for at least 30 minutes.
- Preheat the oven to 400Β°F (200Β°C) or prepare your grill.
- For oven-baking: Place marinated chicken on a parchment-lined baking sheet and bake for 20-25 minutes until cooked through.
- For grilling: Cook each side for about 6-7 minutes until charred and no longer pink inside.
- Let the chicken rest for 5 minutes before slicing. Serve with your favorite sides.
