Ingredients

Scale
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • 2 ripe peaches, sliced
  • 1 pie crust (store-bought or homemade)
  • 3/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 3 tbsp butter, cut into small pieces

Instructions

  1. Preheat your oven to 425Β°F (220Β°C). Roll out the pie crust into a 9-inch pie dish.
  2. Wash and slice the fruits. In a large bowl, combine berries and peaches with sugar and cornstarch; toss gently to coat.
  3. Pour the fruit mixture into the prepared pie crust and dot with butter.
  4. Optionally create a lattice top or simply cover with another layer of dough, cutting slits for steam to escape.
  5. Bake for 35-40 minutes until the crust is golden brown and the filling bubbles.
  6. Cool for at least an hour before slicing. Serve warm or at room temperature.
