  • 2 boneless, skinless chicken breasts (about 12 oz)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 large flour tortillas
  • 1 cup bell peppers (red and yellow), diced
  • 1 medium onion, diced
  • 2 tsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Sour cream for serving

Instructions

  1. Dice the chicken breasts into bite-sized pieces and season with salt, pepper, cumin, and chili powder.
  2. Heat olive oil in a skillet over medium heat. Add the chicken and cook for 5-7 minutes until golden brown. Add onions and bell peppers halfway through cooking.
  3. Lay one tortilla flat in the skillet. Sprinkle half of the shredded cheese on one half of the tortilla. Top with a generous portion of the chicken mixture before folding it over.
  4. Cook for 3-4 minutes per side until golden brown and cheese is melted.
  5. Slice into wedges and serve with sour cream.
