Instructions
- Dice the chicken breasts into bite-sized pieces and season with salt, pepper, cumin, and chili powder.
- Heat olive oil in a skillet over medium heat. Add the chicken and cook for 5-7 minutes until golden brown. Add onions and bell peppers halfway through cooking.
- Lay one tortilla flat in the skillet. Sprinkle half of the shredded cheese on one half of the tortilla. Top with a generous portion of the chicken mixture before folding it over.
- Cook for 3-4 minutes per side until golden brown and cheese is melted.
- Slice into wedges and serve with sour cream.
