  • 2 ripe avocados
  • 2 ripe mangoes
  • 2 tbsp freshly squeezed lime juice (divided)
  • 1/4 cup fresh cilantro, chopped
  • 1/4 medium red onion, thinly sliced
  • 1 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the shrimp by peeling and deveining if necessary. Rinse under cold water and pat dry.
  2. Toss shrimp in a mixing bowl with olive oil, salt, pepper, and half of the lime juice. Let marinate for about 10 minutes.
  3. Heat a skillet over medium-high heat and sauté shrimp for 2-3 minutes on each side until pink and opaque.
  4. While shrimp cooks, dice mangoes and avocados; mix in a bowl with red onion and cilantro.
  5. Assemble bowls by layering the shrimp over the mango-avocado mixture. Drizzle with remaining lime juice and serve immediately.
