  • 2 celery stalks, diced

  • 4 cups vegetable broth
  • 2 tsp cumin
  • 1 tsp paprika
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions, carrots, celery, and garlic until onions are translucent (about 5 minutes).
  2. Stir in rinsed lentils along with cumin and paprika; toast briefly until fragrant.
  3. Add canned tomatoes and vegetable broth; bring to a boil while stirring occasionally.
  4. Reduce heat and let simmer for 30-35 minutes until lentils are tender but hold their shape.
  5. Taste and adjust seasoning with salt and pepper.
