  • 2 medium carrots, chopped

  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 4 cups low-sodium vegetable broth
  • 2 cups fresh spinach or kale
  • 2 tbsp lemon juice
  • 2 tbsp olive oil

Instructions

  1. Rinse lentils under cold water until clear. Chop carrots and onion.
  2. In a large pot, heat olive oil over medium heat. SautΓ© onion and garlic until fragrant.
  3. Add carrots and cook for an additional 3-4 minutes until softened.
  4. Stir in lentils, cumin, and coriander; cook for 1 minute to toast spices.
  5. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 25-30 minutes until lentils are tender.
  6. Stir in spinach/kale and lemon juice; cook for another 5 minutes until greens are tender.
