Instructions

  1. Preheat oven to 375°F (190°C). Roast sweet potatoes until fork-tender (about 45 minutes), then cool and mash.
  2. In a bowl, whisk together flour, brown sugar, cinnamon, baking powder, nutmeg, and salt.
  3. In another bowl, mix mashed sweet potatoes with eggs, milk, and melted butter until well combined.
  4. Gently fold the wet ingredients into the dry ingredients until just combined—avoid overmixing.
  5. Scoop batter into lined muffin tins, filling each cavity two-thirds full.
  6. Bake for 20-25 minutes or until muffins spring back when touched and are golden brown.
  7. Allow to cool for five minutes in the pan before transferring to a wire rack.
