- 5.2 oz Boursin cheese (garlic & herb)
- 2 tbsp olive oil
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- Β½ cup freshly grated Parmesan cheese
- 2 cloves garlic, minced
- Black pepper to taste
Instructions
- Cook the pasta in salted boiling water according to package instructions until al dente. Drain and reserve some cooking water.
- In a large pan, heat olive oil over medium heat. Add minced garlic and sautΓ© until fragrant, about 1 minute. Add spinach and cook until wilted.
- Stir in halved cherry tomatoes and cook for another 3-4 minutes until soft.
- Reduce heat to low; add Boursin cheese to the pan and stir until melted and creamy.
- Combine the drained pasta with the sauce, adding reserved pasta water as needed for creaminess.
- Finish by stirring in freshly grated Parmesan and black pepper. Serve hot.
