Ingredients

  • 8 oz fettuccine or penne pasta
  • 5.2 oz Boursin cheese (garlic & herb)
  • 2 tbsp olive oil
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • Β½ cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • Black pepper to taste

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Drain and reserve some cooking water.
  2. In a large pan, heat olive oil over medium heat. Add minced garlic and sautΓ© until fragrant, about 1 minute. Add spinach and cook until wilted.
  3. Stir in halved cherry tomatoes and cook for another 3-4 minutes until soft.
  4. Reduce heat to low; add Boursin cheese to the pan and stir until melted and creamy.
  5. Combine the drained pasta with the sauce, adding reserved pasta water as needed for creaminess.
  6. Finish by stirring in freshly grated Parmesan and black pepper. Serve hot.
