Description

Chicken Cream Cheese Tortellini is the ultimate comfort food, perfect for busy weeknights or special gatherings. This creamy, savory dish combines tender chicken and cheese-filled tortellini in a rich sauce, topped with fresh spinach and a sprinkle of parmesan.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 8 oz cream cheese
  • 12 oz cheese tortellini
  • 2 cups fresh spinach
  • 1 cup low-sodium chicken broth
  • ½ cup grated parmesan cheese

Instructions

  1. 1. Season chicken breasts with salt and pepper. In a large skillet over medium heat, add olive oil and sear chicken for about 6 minutes on each side until golden brown. Remove and let rest.
  2. 2. In the same skillet, sauté minced garlic until fragrant (about 1 minute).
  3. 3. Add cream cheese and chicken broth to the skillet; stir until smooth and creamy.
  4. 4. Cook tortellini according to package instructions; drain when done.
  5. 5. Chop the rested chicken into bite-sized pieces and return to the skillet along with cooked tortellini and spinach. Mix well to combine.
  6. 6. Serve warm, garnished with freshly grated parmesan.
