Ingredients

Scale
  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 8 oz linguine pasta
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cups fresh spinach
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot. Add linguine and cook until al dente (8-10 minutes). Drain, reserving some pasta water.
  2. In a skillet over medium heat, heat olive oil. Season chicken with salt and pepper; cook until golden brown (5-7 minutes per side). Remove from skillet and slice.
  3. In the same skillet, add garlic and spinach; sauté until fragrant and spinach wilts (1-2 minutes).
  4. Pour in heavy cream while stirring. Gradually add Parmesan cheese until melted and combined.
  5. Add drained linguine to the skillet. Mix in reserved pasta water as needed to achieve desired creaminess.
  6. Plate while hot; garnish with extra Parmesan or cracked pepper if desired.
