  • 4 slices bacon
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium Yukon gold potatoes, diced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or half-and-half)
  • Salt and pepper to taste
  • 1 tsp dried thyme
  • Chopped chives for garnish

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove and let it drain on paper towels.
  2. In the same pot, sauté onions and garlic in the bacon drippings until softened.
  3. Add diced potatoes and vegetable broth; bring to a boil, then reduce to a simmer until potatoes are tender (about 10 minutes).
  4. Stir in corn, thyme, salt, and pepper; simmer for another 5 minutes.
  5. Use an immersion blender to blend half of the soup until smooth (or transfer part to a blender).
  6. Stir in cream before serving; adjust seasoning if needed. Garnish with crumbled bacon and chives.
