- 1 cup pineapple chunks (fresh or canned)
- 1/4 cup brown sugar
- 1/4 cup low-sodium soy sauce
- 1/4 cup ketchup
- 1/4 cup cornstarch
- 2 tbsp vegetable oil (for frying)
- 2 tbsp apple cider vinegar
- 1 tsp sesame oil
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, mix cornstarch with salt and pepper. Cut chicken into bite-sized pieces and coat them in the cornstarch mixture.
- In a skillet over medium heat, add vegetable oil and sauté minced garlic for about 30 seconds. Add chopped bell peppers and cook for an additional 2-3 minutes until slightly softened.
- In a separate bowl, whisk together ketchup, soy sauce, brown sugar, apple cider vinegar, and sesame oil to create the sweet and sour sauce.
