Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  2. In a large bowl, cream together butter and sugar until light and fluffy (3-5 minutes). Add eggs one at a time, mixing well after each addition.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add to the creamed mixture while alternating with milk until just combined.
  4. Divide batter between cake pans and bake for 25-30 minutes or until golden brown. Cool in pans for 10 minutes before transferring to wire racks.
  5. For the custard filling, whisk cornstarch, sugar, and salt in a saucepan; gradually add milk over medium heat, stirring constantly until thickened (5-7 minutes). Remove from heat and stir in vanilla extract and butter. Allow to cool completely.
  6. To make ganache, heat heavy cream until simmering; pour over chocolate chips and let sit for 5 minutes before stirring until smooth.
  7. Assemble the pie: place one cake layer on a serving plate, spread half the custard on top, then add the second layer. Pour ganache over the top and let chill in the fridge for at least an hour before serving.
