- 1/2 cup Granulated Sugar
- 1/4 cup Sour Cream
- 1 tsp Vanilla Extract
- 1 cup Berries (fresh or frozen)
- 1 cup Graham Cracker Crumbs
- 1/4 cup Butter (melted)
- 2 tbsp Powdered Sugar
Instructions
- Preheat oven to 350Β°F (175Β°C). Combine graham cracker crumbs and melted butter; press into mini muffin tins lined with paper liners.
- In a large bowl, beat cream cheese and granulated sugar until smooth. Add sour cream and vanilla; mix until well combined.
- Mash berries with powdered sugar in a small bowl. Fold half into the cheesecake mixture, keeping some chunks intact.
- Fill each muffin liner with cheesecake mixture, topping with remaining berry mash. Swirl gently using a toothpick.
- Bake for 15-18 minutes until set but slightly jiggly in the center. Cool at room temperature, then refrigerate for at least 2 hours.
