  • 4 medium bell peppers (red, yellow, or green)
  • 1 lb ground beef or turkey (or 1 cup cooked quinoa)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella or cheddar cheese
  • 1 cup tomato sauce
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and lightly spray a baking dish.
  2. Prepare the bell peppers by cutting off the tops and removing seeds. Place upright in the baking dish.
  3. In a skillet over medium heat, sauté onion and garlic until fragrant (about 3 minutes). Add ground meat and cook until browned (or prepare quinoa separately).
  4. Mix in tomato sauce, cheese, Italian seasoning, salt, and pepper until well combined.
  5. Stuff each bell pepper with the mixture, packing it tightly.
  6. Cover with foil and bake for 25–30 minutes. Uncover during the last 5 minutes to allow cheese to bubble.
