Ingredients
- 4 medium bell peppers (red, yellow, or green)
- 1 lb ground beef or turkey (or 1 cup cooked quinoa)
- 1 medium onion, finely chopped

- 1 cup tomato sauce
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and lightly spray a baking dish.
- Prepare the bell peppers by cutting off the tops and removing seeds. Place upright in the baking dish.
- In a skillet over medium heat, sauté onion and garlic until fragrant (about 3 minutes). Add ground meat and cook until browned (or prepare quinoa separately).
- Mix in tomato sauce, cheese, Italian seasoning, salt, and pepper until well combined.
- Stuff each bell pepper with the mixture, packing it tightly.
- Cover with foil and bake for 25–30 minutes. Uncover during the last 5 minutes to allow cheese to bubble.
