Description

Chicken Avocado Banch Burritos are a mouthwatering fusion of tender chicken and creamy avocado, wrapped in a warm tortilla, making them perfect for any meal or gathering.

Ingredients

Scale
  • 3–4 boneless, skinless chicken breasts
  • 2 ripe avocados
  • 4 large flour tortillas
  • Fresh cilantro
  • Juice of 1 lime
  • 1/2 cup sour cream (or Greek yogurt)
  • Spices: cumin and paprika
  • 1 can black beans (rinsed)
  • 1 cup shredded cheese (cheddar or Monterey Jack)

Instructions

  1. Season chicken breasts with cumin, paprika, salt, and pepper. Cook in a skillet over medium heat for about 6-7 minutes per side until golden brown and cooked through.
  2. While the chicken cooks, chop avocados and cilantro in a bowl. Add lime juice and salt to taste.
  3. Remove the chicken from the skillet, let it rest for a few minutes, then shred it using two forks.
  4. Assemble your burrito by laying out a tortilla and layering shredded chicken, black beans, avocado mixture, cheese, and sour cream down the center.
  5. Roll the burrito tightly from one end to another. Optionally sear in a skillet until crispy on both sides.
