- 1 cup cherry tomatoes, halved
- 1 cup cooked chicken breast, chopped
- 4 slices bacon, cooked and crumbled
- 1 avocado, sliced
- 2 hard-boiled eggs, sliced
- Β½ cup blue cheese crumbles
- 3 tbsp red wine vinegar
- ΒΌ cup extra virgin olive oil
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- Wash and dry mixed greens. Chop cherry tomatoes and shred leftover chicken if using.
- Cook bacon in a skillet over medium heat until crispy; drain on paper towels and crumble.
- Boil eggs for about 10 minutes, then cool in ice water before peeling.
- In a large bowl or platter, layer mixed greens and top with rows of chicken, bacon, avocado slices, cherry tomatoes, egg slices, and blue cheese.
- In a small bowl, whisk together red wine vinegar, olive oil, Dijon mustard, salt, and pepper until smooth.
