Ingredients
- Chickpeas
- Fresh parsley

Instructions
- Drain and rinse canned chickpeas or soak dried ones overnight.
- In a food processor, blend chickpeas, parsley, garlic, cumin, coriander, salt, and pepper until a coarse mixture forms.
- Shape the mixture into 1-2 inch balls.
- Fry in medium heat oil until golden brown or bake at 400°F (200°C) for 25 minutes.
- For the garlic tahini sauce, mix tahini with minced garlic and lemon juice; gradually add water for desired consistency.
- Spread garlic tahini sauce on pita, fill with falafels and fresh veggies, then roll tightly.
