  • 2 ripe avocados
  • 1 cup sweet corn (fresh or thawed)
  • 2 tbsp lime juice (freshly squeezed)
  • ¼ cup cilantro (chopped)
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • ½ cup sour cream or Greek yogurt
  • 1 tsp chili powder
  • 1 tsp garlic powder

Instructions

  1. Marinate the shrimp by mixing olive oil, lime juice, cumin, smoked paprika, salt, and pepper in a bowl. Add shrimp and let marinate for 20-30 minutes.
  2. Prepare corn salsa by mixing diced avocado, sweet corn, cilantro, lime juice, salt, and pepper in another bowl. Stir gently.
  3. Preheat grill to medium-high heat (about 400°F/200°C).
  4. Grill marinated shrimp on skewers for about 2-3 minutes per side until pink and slightly charred.
  5. Assemble bowls by layering grilled shrimp on top of corn salsa. Drizzle with creamy sauce made from sour cream/yogurt mixed with chili powder and garlic powder.
