Ingredients

  • Canned chickpeas
  • Whole wheat or gluten-free tortilla wraps
  • Fresh spinach
  • Cucumbers
  • Feta cheese
  • Hummus
  • Cherry tomatoes
  • Olive oil
  • Lemon juice

Instructions

  1. Rinse and drain the canned chickpeas. Place them in a bowl.
  2. Chop the cucumbers and halve the cherry tomatoes. Add these to the chickpeas along with crumbled feta, olive oil, and lemon juice.
  3. Spread hummus generously on one side of each tortilla wrap.
  4. Layer fresh spinach leaves followed by the chickpea mixture onto the wrap.
  5. Fold in the sides of the tortilla and roll tightly from bottom to top. Slice in half diagonally before serving.
