- 2 cups vegetable broth or water
- Juice of 1 lemon
Instructions
- Rinse the rice under cold water until clear to remove excess starch.
- In a skillet, heat olive oil over medium heat and cook sliced onions until golden brown, about 20 minutes.
- In a pot, simmer rinsed lentils in vegetable broth or water until tender, approximately 20-25 minutes.
- Combine cooked lentils, rinsed rice, cumin, and coriander in the pot with broth or water according to package instructions.
- Cover and simmer on low heat until the rice is fluffy, about 15-20 minutes.
- Let sit covered for 5 minutes before fluffing with a fork. Add lemon juice before serving.
