Ingredients

  • Spaghetti or penne pasta

Instructions

  1. 1. Preheat oven to 400°F (200°C). Halve tomatoes and peel garlic cloves.
  2. 2. On a lined baking sheet, arrange tomatoes cut-side up with garlic. Drizzle with olive oil and sprinkle with salt. Roast for 25-30 minutes until soft.

  5. 5. Combine pasta, mashed garlic, and tomato mixture in the bowl. Drizzle with more olive oil, toss gently, adding reserved pasta water as needed for desired consistency.
