Ingredients
- Spaghetti or penne pasta
- Fresh ripe tomatoes
- Garlic cloves
- Extra virgin olive oil
- Fresh basil leaves
- Grated Parmesan cheese

Instructions
- 1. Preheat oven to 400°F (200°C). Halve tomatoes and peel garlic cloves.
- 2. On a lined baking sheet, arrange tomatoes cut-side up with garlic. Drizzle with olive oil and sprinkle with salt. Roast for 25-30 minutes until soft.
- 3. Cook pasta according to package instructions until al dente, reserving some pasta water before draining.
- 4. Mash roasted garlic into a paste and mix it with roasted tomatoes in a large bowl.
- 5. Combine pasta, mashed garlic, and tomato mixture in the bowl. Drizzle with more olive oil, toss gently, adding reserved pasta water as needed for desired consistency.
- 6. Stir in fresh basil and grated Parmesan just before serving.
