- 1 cup large shrimp, peeled and deveined
- 1/2 cup peas
- 1/2 cup carrots, diced
- 1/2 cup bell peppers, diced
- 2 eggs, lightly beaten
- 3 tbsp soy sauce (low-sodium preferred)
- 1 tsp sesame oil
- 2 tbsp vegetable oil (for cooking)
- Salt and pepper to taste
Instructions
- Cook the jasmine rice according to package instructions. Rinse under cold water until clear for fluffiness.
- Heat a large skillet or wok over medium heat with 1 tablespoon of vegetable oil. Add shrimp and cook until pink and opaque (about 2 minutes per side). Remove from skillet and set aside.
- In the same skillet, add remaining oil if needed. Stir-fry chopped onions, peas, carrots, and bell peppers until tender (about 5 minutes).
- Push veggies aside; pour in beaten eggs on the other side. Scramble until fully cooked then mix everything together.
- Add cooked rice back into the skillet along with shrimp. Pour soy sauce and sesame oil over the top; stir gently to coat.
- Cook on high heat for another few minutes until heated through. Serve garnished with sliced green onions.
