  • 2 cups cooked rice
  • 1 lb lean ground beef or turkey

  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Slice the tops off the bell peppers and remove seeds.
  2. In a skillet over medium heat, sauté the onion until translucent. Add garlic and cook until fragrant.
  3. Stir in the ground meat and cook until browned. Mix in cooked rice, diced tomatoes, cumin, paprika, salt, and pepper.
  4. Stuff each pepper generously with the filling mixture. Top with cheese if desired.
  5. Place stuffed peppers upright in a baking dish and cover with foil. Bake for 30 minutes; remove foil for the last 10 minutes to brown the cheese.
