- 1 cup shredded cheese (mozzarella or cheddar)
- 1 teaspoon cumin
- 1 teaspoon paprika
Instructions
- Preheat your oven to 375°F (190°C). Slice off the tops of the bell peppers and remove the seeds.
- In a skillet, heat olive oil over medium heat and sauté the chopped onion until translucent. Add minced garlic and cook for an additional minute.
- Mix in the cooked rice and your choice of ground meat or vegetarian alternative. Stir in spices until well combined.
- Generously fill each pepper with the rice mixture and place them upright in a baking dish. Pour tomato sauce over the top and sprinkle with cheese.
