Instructions

  1. Preheat the oven to 400°F (200°C). Wash and dry the sweet potatoes.
  2. Place them on a baking sheet lined with parchment paper and bake for about 45 minutes until tender.
  3. While baking, mix black beans, corn, half of the cheese, salt, and pepper in a bowl.
