Instructions
- Dice the onion, carrots, and celery into small pieces.
- In a large pot, heat olive oil over medium heat and sautΓ© the diced onion, carrots, and celery for about five minutes until softened.
- Add minced garlic, cumin, and coriander; cook for one minute until fragrant.
- Stir in rinsed lentils and vegetable broth. Bring to a boil, then reduce heat to simmer for 30-40 minutes.
- Add bay leaves and simmer until lentils are tender; stir occasionally.
- Season with salt and pepper to taste. Remove bay leaves before serving.
