Ingredients

  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 onion, diced

  • 6 cups low-sodium vegetable broth

  • 2 bay leaves
  • Fresh parsley (optional)

Instructions

  1. Dice the onion, carrots, and celery into small pieces.
  2. In a large pot, heat olive oil over medium heat and sautΓ© the diced onion, carrots, and celery for about five minutes until softened.
  3. Add minced garlic, cumin, and coriander; cook for one minute until fragrant.
  4. Stir in rinsed lentils and vegetable broth. Bring to a boil, then reduce heat to simmer for 30-40 minutes.
  5. Add bay leaves and simmer until lentils are tender; stir occasionally.
  6. Season with salt and pepper to taste. Remove bay leaves before serving.
