Romesco Sauce is a vibrant, nutty blend of roasted red peppers, tomatoes, and spices that elevates any dish. Perfect as a dip or drizzle, this sauce will delight your taste buds.


Ingredients

  • 2 red bell peppers
  • 2 ripe tomatoes
  • 2 garlic cloves
  • 1/2 cup almonds or hazelnuts
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 450Β°F (230Β°C). Halve bell peppers and remove seeds. Place cut-side down on a baking sheet with halved tomatoes.
  2. Roast vegetables for 20-25 minutes until charred. Meanwhile, toast nuts in a dry skillet over medium heat for about 5 minutes until golden brown.
  3. Once cooled, peel the skins off the peppers. Add them to a blender with roasted tomatoes, garlic, toasted nuts, olive oil, vinegar, paprika, salt, and pepper.
  4. Blend until smooth, adding more olive oil for desired consistency. Adjust seasoning to taste.
