- 2 red bell peppers
- 2 ripe tomatoes
- 2 garlic cloves
- 1/2 cup almonds or hazelnuts
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon smoked paprika
- Salt and pepper to taste
Instructions
- Preheat oven to 450Β°F (230Β°C). Halve bell peppers and remove seeds. Place cut-side down on a baking sheet with halved tomatoes.
- Roast vegetables for 20-25 minutes until charred. Meanwhile, toast nuts in a dry skillet over medium heat for about 5 minutes until golden brown.
- Once cooled, peel the skins off the peppers. Add them to a blender with roasted tomatoes, garlic, toasted nuts, olive oil, vinegar, paprika, salt, and pepper.
- Blend until smooth, adding more olive oil for desired consistency. Adjust seasoning to taste.
