- 3–4 boneless skinless chicken breasts
- 1 onion, chopped
- 4 garlic cloves, minced
- 1-inch piece of fresh ginger, minced
- 1 can (28 oz) whole peeled tomatoes
- 1 cup heavy cream
- 4 tablespoons unsalted butter
- Spices: cumin, coriander, garam masala
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Chop the onion and mince the garlic and ginger. Set aside.
- In a large pan over medium heat, melt the butter. Sauté the onions until golden brown (5-7 minutes).
- Add the garlic and ginger; sauté for another 1-2 minutes until fragrant.
- Stir in spices and canned tomatoes; simmer for about 10 minutes.
- Blend the sauce until smooth, then return it to the pan.
- Add chicken pieces to the sauce; cover and simmer on low heat for about 20 minutes or until cooked through.
- Stir in heavy cream and additional salt if needed; simmer for another 5 minutes.
- Garnish with cilantro before serving hot with rice or naan.
