  • 34 boneless skinless chicken breasts
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1-inch piece of fresh ginger, minced
  • 1 can (28 oz) whole peeled tomatoes
  • 1 cup heavy cream
  • 4 tablespoons unsalted butter
  • Spices: cumin, coriander, garam masala
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Chop the onion and mince the garlic and ginger. Set aside.
  2. In a large pan over medium heat, melt the butter. Sauté the onions until golden brown (5-7 minutes).
  3. Add the garlic and ginger; sauté for another 1-2 minutes until fragrant.
  4. Stir in spices and canned tomatoes; simmer for about 10 minutes.
  5. Blend the sauce until smooth, then return it to the pan.
  6. Add chicken pieces to the sauce; cover and simmer on low heat for about 20 minutes or until cooked through.
  7. Stir in heavy cream and additional salt if needed; simmer for another 5 minutes.
  8. Garnish with cilantro before serving hot with rice or naan.
