- Soft corn tortillas
- Shredded Monterey Jack and Cheddar cheese
- Enchilada sauce

Instructions
- Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
- In a skillet over medium heat, sauté chopped onions and bell peppers until soft. Add diced chicken, cumin, and chili powder; cook until the chicken is golden brown.
- Layer tortillas in the baking dish. Add half the chicken mixture, pour half the enchilada sauce over it, and sprinkle with cheese. Repeat layers with remaining ingredients.
- Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until bubbly.
