Ingredients

  • Boneless, skinless chicken breasts
  • Fresh lemons (juiced and zested)
  • Long-grain rice
  • Low-sodium chicken broth

Instructions

  1. Wash chicken and vegetables; zest and juice lemons; chop garlic.
  2. Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper and cook until golden brown (about 6 minutes per side). Remove from skillet.
  3. Sauté minced garlic in the same skillet until fragrant. Stir in lemon juice and oregano.
