  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • ½ cup grated parmesan cheese (divided)
  • 2 cups marinara sauce
  • ¼ cup fresh basil, chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a large baking dish.
  2. In a skillet over medium heat, add olive oil and sauté spinach until wilted (about 3-4 minutes).
  3. In a bowl, mix sautéed spinach, ricotta cheese, half of the parmesan cheese, salt, pepper, and basil until well blended.
  4. Cook pasta shells according to package instructions; drain and fill each shell with the spinach mixture.
  5. Place stuffed shells seam-side up in the baking dish. Pour marinara sauce over the shells and sprinkle with remaining parmesan cheese.
  6. Cover with foil and bake for 25 minutes; remove foil for the last 5 minutes to allow cheese to brown.
