  • 2 cups mixed seasonal vegetables (eggplant, potatoes, green beans)
  • 1/4 cup fresh coriander leaves, chopped
  • 1/4 cup fresh fenugreek leaves, chopped
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1/2 tsp turmeric powder
  • 2 tbsp mustard oil
  • 2 green chilies, slit
  • 1 tbsp jaggery, grated
  • 2 tbsp lemon juice
  • Salt to taste
  • Water as needed

Instructions

  1. Wash and chop the mixed vegetables into even-sized, bite-sized pieces.
  2. Heat mustard oil in a large pot over medium heat. Add mustard seeds and cumin seeds; wait until they start popping.
  3. Add chopped vegetables, salt, and turmeric. Stir well and sauté for 5–7 minutes until slightly softened.
  4. Incorporate jaggery and green chilies; mix until jaggery melts. Simmer for another 10 minutes.
  5. Add water to cover the vegetables halfway and cover tightly with a lid. Cook on low heat for 20–25 minutes until tender.
  6. Finish by squeezing fresh lemon juice and garnishing with coriander and fenugreek leaves before serving.
