- 1/4 cup fresh coriander leaves, chopped
- 1/4 cup fresh fenugreek leaves, chopped
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1/2 tsp turmeric powder
- 2 tbsp mustard oil
- 2 green chilies, slit
- 1 tbsp jaggery, grated
- 2 tbsp lemon juice
- Salt to taste

Instructions
- Wash and chop the mixed vegetables into even-sized, bite-sized pieces.
- Heat mustard oil in a large pot over medium heat. Add mustard seeds and cumin seeds; wait until they start popping.
- Add chopped vegetables, salt, and turmeric. Stir well and sauté for 5–7 minutes until slightly softened.
- Incorporate jaggery and green chilies; mix until jaggery melts. Simmer for another 10 minutes.
- Add water to cover the vegetables halfway and cover tightly with a lid. Cook on low heat for 20–25 minutes until tender.
- Finish by squeezing fresh lemon juice and garnishing with coriander and fenugreek leaves before serving.
