  • 1 lb ground turkey (or beef/chicken)
  • 1 cup cooked rice (white or brown)
  • 1 medium onion, chopped

  • 1 cup tomato sauce
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet over medium heat, sauté chopped onion and garlic until golden. Add ground meat and cook until browned. Drain excess fat.
  4. Stir in cooked rice, tomato sauce, cumin, paprika, salt, and pepper until well combined.
  5. Generously fill each bell pepper with the mixture and place them upright in the baking dish.
  6. Cover with aluminum foil and bake for about 30 minutes; remove foil and bake for an additional 10-15 minutes until tender.
