  • 4 cups fresh spinach
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 2 tsp ground cumin
  • 1 tsp curry powder
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion until translucent (about 5 minutes). Add minced garlic and cook until fragrant.
  2. Stir in cumin and curry powder, cooking for an additional minute.
  3. Add drained chickpeas, stirring to coat them with spices; cook for about 3 minutes.
