  • 2 cups fresh spinach or kale
  • 1/2 cup freshly grated Parmesan cheese

Instructions

  1. Cook the Pasta: Boil salted water in a large pot. Add penne and cook according to package instructions until al dente.
  2. Sauté the Sausage: In a large skillet over medium heat, add olive oil and crumble in the Italian sausage. Cook for about 5-7 minutes, until browned.
  3. Add Garlic & Tomatoes: Stir in minced garlic during the last minute of cooking sausage. Pour in diced tomatoes and simmer gently.
  4. Add Greens & Combine: Mix in spinach or kale until wilted. Drain the pasta (do not rinse) and add it to the skillet.
  5. Toss with Cheese & Serve: Sprinkle Parmesan on top while tossing everything together until well mixed. Serve hot.
