  • 2 bay leaves
  • 1 tsp ground cumin

Instructions

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add chopped onions, carrots, and celery; sauté until softened (about 5 minutes).
  2. Stir in minced garlic, cumin, and coriander; cook for an additional minute until fragrant.
  3. Add rinsed lentils and diced tomatoes (with juices) into the pot; stir to combine.
  4. Pour in vegetable broth and add bay leaves; bring to a boil. Reduce heat to low and simmer for about 25 minutes or until lentils are tender.
  5. Remove bay leaves and season with salt and pepper to taste.
  6. Serve hot, garnished with fresh parsley or lemon juice if desired.
