Ingredients

  • Whole Milk
  • Granulated Sugar
  • Egg Yolks
  • Vanilla Extract
  • Heavy Cream
  • Dark Chocolate
  • Cocoa Powder for dusting

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Warm milk and sugar in a saucepan over medium heat until just below boiling.
  3. In a bowl, whisk egg yolks and vanilla extract until smooth. Gradually add the warm milk mixture while whisking to combine.
  4. Pour the mixture into ramekins placed in a baking pan filled with hot water (bain-marie). Bake for 30-35 minutes until set but slightly wobbly.
  5. For ganache, heat heavy cream until simmering and pour over chopped dark chocolate. Let sit for 5 minutes before stirring until smooth.
  6. Chill baked custards for at least 2 hours, then top with ganache and dust with cocoa powder before serving.
