Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter until crumbly. Press firmly into the bottom of a springform pan.
  2. Bake the crust for about 10 minutes until golden brown. Allow it to cool.
  3. Beat softened cream cheese until smooth. Gradually add sugar and mix well.
  4. Stir in sour cream, eggs one at a time, instant coffee granules, and vanilla extract until blended but not over-mixed.
  5. Pour the filling over the cooled crust and smooth it out. Bake for 50-60 minutes until slightly jiggly in the center.
  6. Turn off the oven and leave the cheesecake inside with the door ajar for an hour to cool slowly. Chill in the fridge for at least four hours before serving.
