  • 9 no-boil lasagna noodles
  • 2 cups fresh spinach, chopped
  • 1 cup cremini mushrooms, sliced
  • 8 oz cream cheese, softened
  • 15 oz whole milk ricotta cheese
  • 2 cups shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • 3 garlic cloves, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add sliced mushrooms and chopped spinach. Cook for about 5 minutes until wilted.
  3. In a bowl, blend softened cream cheese, ricotta cheese, half of the mozzarella cheese, salt, and pepper until smooth.
  4. Spread a thin layer of the veggie mixture in a baking dish. Layer three lasagna noodles over it followed by spoonfuls of the cheesy filling and another layer of veggies. Repeat until ingredients are used up.
  5. Top with remaining mozzarella and Parmesan cheese. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until golden brown.
