  • 1 lb ribeye or sirloin steak
  • 1 lb baby potatoes, halved
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 2 tsp olive oil
  • Salt and pepper to taste
  • Fresh parsley or rosemary for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a bowl, toss halved baby potatoes with olive oil, salt, pepper, and half the minced garlic. Spread evenly in the baking dish.
  3. Season the steak with salt and pepper on both sides; let it sit at room temperature for 10 minutes.
  4. In a skillet over medium-high heat, melt 2 tbsp of butter until bubbling. Sear the steak for 3-4 minutes on each side.
  5. Add the remaining garlic and herbs to the skillet; spoon the garlic butter over the steak as it finishes cooking.
  6. Remove from heat and let the steak rest for 5 minutes before slicing against the grain. Serve with roasted potatoes drizzled with leftover garlic butter.
