Instructions

  1. Prep the veggies: Wash and peel the potatoes; cube them. Chop cauliflower into uniform florets.
  2. Sauté aromatics: Heat oil in a large pan over medium heat; add onions and cook until golden brown (about 5 minutes).
  3. Add spices: Stir in garlic, ginger, cumin seeds, turmeric, and chili powder for about 30 seconds until fragrant.
  4. Incorporate tomatoes: Add diced tomatoes; cook until soft (3-4 minutes).
  5. Cook veggies: Add potatoes and cauliflower; mix well with spices and salt. Sauté for another minute.
  6. Simmer: Pour in just enough water to cover vegetables partially; cover the pan and simmer on low heat for about 20 minutes until tender yet firm.
