  • 2 medium starchy potatoes (about 1 lb)
  • 1 cup green peas (fresh or frozen)
  • 1 medium onion, finely diced
  • 2 tsp cumin powder
  • 2 tsp coriander powder
  • 1 tsp garam masala
  • Salt and pepper to taste
  • ¼ cup fresh cilantro, chopped
  • 1 tbsp lemon juice
  • Egg wash (1 egg mixed with 1 tbsp water, optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Boil the potatoes until fork-tender; drain and let cool before mashing.
  3. In a pan over medium heat, sauté diced onions until translucent. Add peas and cook for an additional minute.
  4. Stir in mashed potatoes, spices, cilantro, lemon juice, salt, and pepper until well combined.
  5. Roll out puff pastry on a floured surface and cut into squares.
  6. Place about 1-2 tablespoons of filling on each pastry square. Fold into triangles and seal edges with a fork.
  7. Brush with egg wash if desired and bake for 20-25 minutes until golden brown.
