Instructions

  1. Prepare ingredients: Chop onions and mince garlic. Let the ground beef come to room temperature.
  2. Sauté aromatics: Heat olive oil in a skillet over medium heat. Add onions and garlic; cook until translucent.
  3. Brown the beef: Add ground beef along with cumin and chili powder. Cook until browned, breaking it apart until no pink remains.
  4. Mix sauce: Stir half of the enchilada sauce into the beef mixture until well-coated.
  5. Fill tortillas: Spoon some beef mixture into each tortilla, roll tightly, and place seam-side down in a baking dish.
