- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 tablespoons olive oil
- 3 tablespoons butter
- 8 oz cremini or button mushrooms, sliced
- 4 cloves garlic, minced
- 3/4 cup dry Marsala wine
- 3/4 cup chicken broth
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Pound chicken breasts to an even thickness and season both sides with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat. Sauté chicken for about 5 minutes per side until golden brown. Remove from skillet and set aside.
- In the same skillet, add butter and let it melt. Add mushrooms and garlic; sauté for about 6 minutes until browned.
- Pour in Marsala wine, scraping up any browned bits from the bottom of the pan. Add chicken broth and simmer for about 3 minutes.
- Return chicken to the skillet, spoon sauce over it, cover, and cook for another 7 minutes.
- Serve hot, garnished with fresh parsley.
